Simple Veg Soup
I have been making this simple soup for a very long time, I keep customizing it here and there it depends on what I have been growing or what has been harvested locally by season.
I replaced onion with grated zucchini and leak to make it easier on the body.
This I a beautiful warming dish that you can make within 20min.
Medium size pot.
Grated half Zucchini and grated 1 large carrot, fry it on the dash of olive oil in the pot
Add 4-5 Potatoes cut into cubes, and 2 Carrots cut into wheels and fry it further with the first grated batch stirring frequently, this will give the soup a nice flavour.
The zucchini start to stick to the bottom of the pot first so be careful here, don’t burn it down. Most of the veg will start to stick to the pot anyway but here comes the next step - add a cup of water and scrape the bottom of the pot so this way all the stuck stuff creates the favour
Add 2x 4inch celery sticks, fill the pot with water and cook on medium heat until the potato is done, 12 min more or less,,,
Add: Salt first, Pepper, Paprika, and Turmeric later. And fresh Thyme.
Once the whole thing is ready - take part of the potato out and smash them on the plate and put them back to the soup.
At the end add Brocolli Tender Steam - close the pot and let it rest for 5min
Serve with fresh Zucchini Flowers, Sprouts & Garden Cress - all that you can grow yourself
*If you caught a cold, have a full nose or have the flu add freshly squeezed garlic. I use garlic here while having some heavy colds during the autumn or winter.
