Kale & Celery

At the bottom, there are a hand full of curly kale and roughly cut celery sticks. In this one, I first get rid of the kale stems that are quite hard to eat and I let these two ingredients sit for at least 10-15 min in the salad dressing.

- olive oil, a bit of salt and lemon to make both of the veggies softer, after I add other super green leaves that I have

- mix them all together, add honey, pepper, dried green beans and pumpkin seeds, sprouts and radishes at the side…

You can add a big spoon or two of chickpea humus at the side to make it more grounding. It’s a lovely salad and it will make you full, energised and light at the same time.

I love my sprouts, they are so easy to grow and keep healing me for many years… I outsource organic seeds on the internet and the glass bottles are originally from Vogel but you can buy them on amazon from other companies.

This is my new super green salad and it’s so good. It will reboot you in no time.
There is also spinach and lamb lettuce in it and if you want even more green good then add chunks of cucumber to eat with it.
