Pumpkin Rice

Pumpkin, Leek, Rice with Quinoa & Rocket Salad

  • First cook 1 cup of Rice of your choice together with a half cup of Quinoa - for 2

    (*the water measure is 1 cup of rice = 2 cups of water, half cup of quinoa = 1 cup of water) 15-20min, if you use white rice you can cook it together with quinoa, make sure you wash the quinoa properly to eliminate the bitter taste.

  • cut Pumpkin into cubes, stir fry in olive oil with a dash of soya sauce - add a dash of water if needed

  • when the pumpkin is soft add Leek, and grated Zucchini and fry for another min

  • you can add also finely cut celery sticks if you like

    Done! Mix it with your rice on the pan, once cooled down - add a fresh rocket, squeeze a bit of lemon over the whole dish, and add a bit of honey if you like. Enjoy - It’s fast and so so so good.
