This is very often my breakfast actually if I don’t have nuts and dried fruit or feel like veg instead.
Veg gives you great clarity, the pumpkin seeds will keep you going longer and the spinach with sprouts will detox and gives you the necessary minerals and vitamins. I often make sure I consume also some celery and cucumber but if I don’t have any or it’s cold outside I go for grilling pumpkin and zucchini.
Usually, the grilled pumpkin is replaced with avocado if I find any in the shop
I don’t think this needs any longer explanation - all I use is a contact grill for my veg, olive oil on the top, salt and pepper. The pumpkin is done on the pan for a few min with a tiny bit of soya sauce
