Black Rice with Peas & Zucchini

This recipe is very easy and simple and soooo good. The nutty taste of the black rice is just awesome. It takes about 18min to cook.


  • First, cook the black rice according to the instructions. I am using Black Rice from “Gallo”

  • and organic frozen peas that I always have in the freezer, not canned peas that won’t taste good.

  • on the pan fry half to 1 cup of grated Zucchini *instead of onion in olive oil - here we use a bit more of the olive oil to make the rice wet (*you can add also
    2 chillies while frying Zucchine if you like spicy)

  • use frozen garden peas if you don’t have fresh ones, half to 1 cup is enough, you can pour hot water over it and let it sit for a few min in the cup to defroze

  • drain the peas, and add them to the pan once the zucchini is ready combine the tastes, switch off the cooker and close it for a while - done,

  • Do NOT cook the peas and remove the whole pan from the warm hob, otherwise, it will get hard. The idea here is just to let the tastes of those two ingredients combine, let it sit under the lid and don’t forget to remove the chillies if you add some before you mix the whole thing with rice.

  • Mix it with black rice to create “risotto”

  • add salt & pepper to taste


Note: I am using Zucchini instead of onion to eliminate gas and make sure I can sit and meditate. Serious “Yogis & Meditators” do not use garlic or onion in their diet for a very good reason so they can actually bend while doing yoga and can sit while meditating.
