Sweet Potato, Chickpeas, Asparagus Salad

Fast stir fry - make sure you add the potato first ad a dash of water so they can get tender, follow the veg in order to make sure all is cooked but not destroyed…

  • Half cup of Sweet Potato chopped into squares *fry this first with a dash of Soya Sauce until it’s nicely brown and tender

  • Few strings of Asparagus - cut into 1cm pieces *add first the bottom of the strings, keep the very tips of the plant for later

  • Half cup of grated Zucchini - *instead of Onion

  • add also the rest of the Asparagus - the tips

  • 1 can or Cup of Cooked Chickpeas and let the whole dish blend the tastes for a bit (1-2min)

  • Salt, Pepper, 1-2 small Chilli Peppers *optional

  • add more soya sauce if you want, just get the one without preservatives…

  • In the end - Sweet paprika & a bit of turmeric, add water to create more sauce, you can add a bit of your own homemade tomato pesto in the middle of your cooking if you want a different sauce…
    - Get creative…

For Salad: Any “Super Greens” of your choice are great, spinach, young kale, red chard, rocket, lamb lettuce…

The dressing is always the same:
- olive oil, a dash of Lemon & Honey* (salt & pepper)

  • Mix the fresh salad with the rest & enjoy

A bit about Honey - I know that Vegans do not agree on eating honey but there is nothing wrong in doing so if you are having honey from a good and gentle source, that is organic.

The composition of Honey is nearest to the human blood so it’s extremely beneficial for you.

Honey will purify your blood. Introducing honey into your diet will boost your energy levels, clear your skin, and is widely used in yogic diet together with turmeric & neem…

You can practically live only on honey, water & breath… There are tribes that live in the jungle that feed only on Honey and water. Honey is phenomenal, so I do not follow this Vegan trend of not using honey. I am aware of the damage that the mass honey farming cause so I do rescue bees on daily bases on my way through the town, they are exhausted on their journeys and you can find them often dehydrated on the floor so I do give back for the honey they have been making for us. I usually have some sweet fruit with me and water so I give them either dry blueberry or other fresh fruit I currently have and a few drops of water to save them if I find them on the walking path. They do get better and recover and fly away…

Use your own internal compass with honey… It’s a marvellous superfood and can restore your cells if you fast for 9days on honey & distilled water only… You can reverse your ageing, look like 20 again and completely restructure your cells. There is a great Detox protocol that uses this diet for 12 days. - I will write a separate post about this type of detox.

So be open to honey - just don’t cook with it - it turns poisonous once put in the hot water - so keep that in mind when using it.
